Process description

The process of rearranging fats from one triglyceride molecule to another with the help of a catalyst (usually sodium methoxide) is known as interesterification. Interesterification is used to alter the melting point of fats or change their texture or make a uniform blend from two completely different oils. Interesterification avoids the formation of trans-fatty acids and results in healthier modified fats with excellent oxidative stability, rich texture and improved taste.

Vegetable oils are treated with a catalyst in a reactor. The oil is circulated through the autoclave in order to complete the reaction. Once the reaction is completed, the interesterified oil is bleached, filtered and then sent for storage.
